Just in case you’re like me and everytime you hear the term “Buffalo Wings” you wonder how Buffalo was ever associated with chicken wings, this article is for you, I mean us…
I do not think that there is any part in the globe where you will not find people who love chicken wings. This is a dish that is loved both in restaurants as well as in the home. It is also a very popular dish that is taken during special occasions like weddings, parties and even during the Super bowl game. It was expected that Superbowl fans would consume 1.23 Billion wings over the weekend of this year’s event!
Since their introduction in the market, chefs as well as individuals have come up with new recipes for preparing the dish to make it more tasty and popular, but where did they come from exactly? Where did it all begin… While I’m sure there are as many claims of invention for buffalo wings as there are for any other popular food or beverage, this is the folklore standard.
A couple named Frank and Teressa Bellissimo bought a restaurant in Buffalo, New York in 1939. They called it the Anchor Bar and in those days chicken wings were either discarded altogether or just used to make soup stock. Even within the Bellissimo family there are different versions of the “invention” story.
Husband Frank says received a mis-delivery of a chicken order. They were expecting necks and backs of the chicken that they used in their spagetti sauce, but wings were delivered instead. He then asked Teressa to do something with them and she deep fried the wings, coated them with hot sauce, then served them up with blue cheese (the house dressing) and celery sticks from the antipasto trays.
Dominic Belissimo who is Teressa’s and Franks son, said that his mom came up with the idea of serving the wings one night when there were many patrons in the bar who were buying a lot of drinks. He wanted to be a good host and show his appreciation to the loyal customers who were mostly practicing Catholics and would be able to eat meat at midnight, so he asked her to prepare something.
There is also the version that Teressa just came up with them on her own, but in all cases she still gets the credit. Afterwards they were put on the menu and the rest is history! Oh wait… I guess it’s obvious but the “buffalo” wing is all about where it was invented – Buffalo, New York. If buffalo had wings… we’d be selling all natural, range raised ones here.
No matter where, when, or by who. the chicken wing has definitely gone from a lowly, nearly wasted portion of the bird to a mainstream and very popular socio-economic force.
