Shrimp Casserole

Very pitcuresque. Assemble in the morning and refrigerate until ready to bake.

For 6 servings

  • 1.5 pound(s) fresh asparagus, cut inot 1 inch pieces (about
  • 4 1/2 cups)
  • 1 cup(s) boiling water
  • 6 large eggs, beaten
  • 0.33 cup(s) finely chopped onion
  • 0.5 cup(s) finely chopped green pepper
  • teaspoon(s) salt
  • 0.25 teaspoon(s) pepper
  • 1 pinch(es) ground thyme
  • 2 cup(s) shrimp cooked and drained
  • 1 cup(s) grated sharp cheddar cheese

Shrimp Casserole Directions

  1. Cook asparagus in boiling water for 3-5 minutes until tender-crisp. Drain.
  2. Combine next 8 ingredients in bowl. Add asparagus. Stir. Turn into greased 2 quart casserole dish. Bake, uncovered, in 350 degrees F oven for 1 1/4 hours.
  3. Sprinkle with cheese. Bake for 5 to 10 minutes until set.
