1.5 pound(s) fresh asparagus, cut inot 1 inch pieces (about
4 1/2 cups)
1 cup(s) boiling water
6 large eggs, beaten
0.33 cup(s) finely chopped onion
0.5 cup(s) finely chopped green pepper
teaspoon(s) salt
0.25 teaspoon(s) pepper
1 pinch(es) ground thyme
2 cup(s) shrimp cooked and drained
1 cup(s) grated sharp cheddar cheese
Shrimp Casserole Directions
Cook asparagus in boiling water for 3-5 minutes until tender-crisp. Drain.
Combine next 8 ingredients in bowl. Add asparagus. Stir. Turn into greased 2 quart casserole dish. Bake, uncovered, in 350 degrees F oven for 1 1/4 hours.
Sprinkle with cheese. Bake for 5 to 10 minutes until set.
