  • 36 oysters, shucked, on the half shell rock salt
  • 2 cup(s) spinach, cooked and drained
  • 0.25 cup(s) onion, chopped
  • 2 fresh bay leaves
  • 1 teaspoon(s) parsley, chopped
  • 0.5 teaspoon(s) salt
  • 0.25 teaspoon(s) hot pepper sauce
  • 0.33 cup(s) butter
  • 0.5 cup(s) breadcrumbs
  • 1 tablespoon(s) lemon juice

Oysters Rockefeller Directions

  1. Preheat oven to 400 degrees F. Arrange oysters in shells on rock salt in baking dish.
  2. Process spinach, onion, bay leaves, celery, parsley, and seasonings in a food processor until smooth.
  3. In a saucepan, cook spinach mixture in butter for 5 minutes.
  4. Add breadcrumbs and lemon juice, mixing well. Spoon the spinach mixture on top of oysters and bake at 400 degrees F until oyster edges curl.
